Menu: For starters, enjoy Carpaccio of Colorado Beef served with Smoked Sweet Potato Hash and a Quail Egg, Scallops with Sweet Corn Risotto, Lobster and Romaine Salad with a Tarragon Caesar Vinaigrette, to name a few. There are many delicious entrees to choose from and nightly specials including Brook Trout and Waygu Beef Short Rib Duet served with Crimson Lentils and a Sauce Romanesco, Rack of Colorado Lamb served with Maple Roasted Root Vegetables and a Garlic Mint Pesto, King Salmon served with Anchiote Glaze and San Luis Valley Quinoa.
